- 1 pound cooked chicken, shredded
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onion and peppers until softened, about 5 minutes.
- Add minced garlic and Cajun seasoning, cook for 1 minute.
- Pour in chicken broth and bring to a simmer.
- Add shredded chicken and cook for an additional 10 minutes.
- Stir in heavy cream, season with salt and pepper, and simmer for 5 minutes.
- Serve hot, garnished with chopped green onions.

- Adjust Cajun seasoning for desired spice level.
