- 2 tablespoons olive oil
- 1 pound chicken breasts, sliced
- 2 teaspoons Cajun seasoning
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 8 ounces pasta (penne or fettuccine)
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken slices and Cajun seasoning. Cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic and sliced bell peppers to the skillet. Sauté for 2-3 minutes until fragrant and slightly tender.
- Pour in the heavy cream, stirring well. Reduce heat to low and simmer for 3-4 minutes until the sauce thickens slightly.
- Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Add cooked pasta to the sauce and toss to coat evenly.
- Serve hot, garnished with chopped green onions.
Notes
- You can substitute heavy cream with almond milk for a lighter version.
- Adjust Cajun seasoning to spice preference.
