- 2 chicken breasts, sliced
- 1 tablespoon Cajun seasoning
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- Season chicken slices with Cajun seasoning and a pinch of salt.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned. Remove and set aside.
- In the same skillet, sauté garlic and red bell peppers until tender.
- Add orzo to the skillet, stirring to coat it in the flavors.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer until orzo is cooked and liquid is absorbed, about 15 minutes.
- Return chicken to the skillet, stir to combine, and cook an additional 2-3 minutes.
- Garnish with chopped green onions before serving.

- Adjust Cajun seasoning levels for spiciness preference.
- For added creaminess, stir in a splash of heavy cream or cream cheese at the end.
