- 4 medium potatoes, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/2 cup beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until golden brown, about 8 minutes.
- Add chopped onion and garlic; cook until softened, about 3 minutes.
- Push potatoes to the side, add ground beef to the skillet, and cook until browned, breaking it apart with a spatula.
- Pour in beef broth, season with salt and pepper, and let simmer for 5 minutes.
- Sprinkle cheese over the mixture, cover, and cook until cheese melts, about 2 minutes.
- Garnish with fresh parsley before serving.

- Use shredded mozzarella or a blend of cheeses for variation.
- For added flavor, include diced bell peppers or mushrooms.
