- 1 lb chicken breasts or thighs, cut into strips
- 1/2 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 2 teaspoons rice vinegar
- 2 cups cooked rice
- 1 cup shredded lettuce or cabbage
- 2 green onions, sliced
- Sesame seeds for garnish
- Oil for frying
Instructions
- Heat oil in a deep fryer or large skillet over medium-high heat.
- Coat chicken strips with a light layer of flour or cornstarch if desired.
- Fry chicken until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.
- In a bowl, mix mayonnaise, sriracha, honey, and rice vinegar to make the spicy sauce.
- Toss the cooked chicken in the sauce until well coated.
- Assemble bowls with rice, shredded lettuce, coated chicken, and top with sliced green onions and sesame seeds.
Notes
- Adjust spice level by altering sriracha quantity.
- For extra crunch, double fry the chicken.
