Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sear chicken breasts until golden on both sides, then set aside.
  3. In the same skillet, sauté onions and mushrooms until tender. Add garlic and cook for another minute.
  4. Mix chicken broth, sour cream, paprika, salt, and pepper. Pour over the mushroom mixture and stir well.
  5. Arrange chicken in a baking dish, pour mushroom sauce over the top.
  6. Bake uncovered for 25-30 minutes until chicken is cooked through and bubbly.
  7. Garnish with fresh parsley before serving.
