- 4 boneless, skinless chicken breasts
- 8 oz mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup sour cream
- 1/2 cup chicken broth
- 2 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sear chicken breasts until golden on both sides, then set aside.
- In the same skillet, sauté onions and mushrooms until tender. Add garlic and cook for another minute.
- Mix chicken broth, sour cream, paprika, salt, and pepper. Pour over the mushroom mixture and stir well.
- Arrange chicken in a baking dish, pour mushroom sauce over the top.
- Bake uncovered for 25-30 minutes until chicken is cooked through and bubbly.
- Garnish with fresh parsley before serving.
Notes
- Serve with rice, noodles, or mashed potatoes for a complete meal.
- Can be prepared ahead and refrigerated for up to 2 days.
