- 4 boneless, skinless chicken breasts
- 2 cups sliced mushrooms
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup sour cream
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium-high heat and brown chicken for 3-4 minutes on each side.
- Remove chicken and set aside. In the same skillet, sauté onions and garlic until translucent.
- Add mushrooms and cook until tender.
- Mix chicken broth and sour cream, then pour into the skillet. Stir well to combine.
- Place browned chicken in a baking dish, pour sauce over the top.
- Bake uncovered for 25-30 minutes until chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, add a splash of white wine during sautéing.
- Serve with rice, noodles, or mashed potatoes for a complete meal.
- This dish can be prepared ahead and baked when ready to serve.
