- 4 slices of bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- 1 package potato gnocchi
- Salt and pepper to taste
- Chopped chives or parsley for garnish
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic until translucent.
- Pour in chicken broth and bring to a simmer.
- Add potato gnocchi and cook until tender according to package directions.
- Reduce heat, stir in milk and shredded cheddar cheese until melted and creamy.
- Crumble the cooked bacon and add to the soup. Season with salt and pepper.
- Serve hot, garnished with chopped chives or parsley.

- For extra flavor, sauté onion and garlic in bacon drippings.
- Use gluten-free gnocchi if needed.
