- 4 slices bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 package (16 oz) potato gnocchi
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh chives or parsley, chopped (for garnish)
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic in bacon drippings until translucent.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook according to package instructions, about 3-4 minutes.
- Lower heat and stir in shredded cheddar cheese until melted.
- Pour in heavy cream and season with salt and pepper, heating through.
- Serve topped with crispy bacon and chopped herbs.

- You can substitute turkey bacon for a leaner option.
- For a gluten-free version, use gluten-free gnocchi.
