- 4 slices bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups half-and-half
- 1 pound potato gnocchi
- 1 cup shredded cheddar cheese

Instructions
- In a large pot, cook chopped bacon over medium heat until crispy. Remove and set aside.
- In the bacon drippings, sauté diced onion and minced garlic until fragrant and translucent.
- Add chicken broth and bring to a boil.
- Stir in gnocchi and cook according to package instructions until tender.
- Reduce heat and add half-and-half and shredded cheddar, stirring until cheese melts.
- Season with salt and pepper to taste. Garnish with cooked bacon and fresh herbs before serving.
Notes
- For extra flavor, add a pinch of smoked paprika or cayenne pepper.
- Use quality shredded cheddar for a richer taste.
