- 1 pound Italian sausage
- 1 small onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 (9-ounce) package refrigerated tortellini
- 1 cup chopped kale or spinach
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until translucent.
- Pour in chicken broth and bring to a boil.
- Add sausage, dried basil, oregano, salt, and pepper. Reduce heat and simmer for 10 minutes.
- Stir in tortellini and cook until tender, about 3-5 minutes.
- Add chopped kale or spinach and cook until wilted.
- Serve hot, garnished with fresh parsley.
Notes
- You can substitute Italian sausage with turkey or chicken sausage for a lighter option.
- For extra flavor, add a splash of red pepper flakes.
