- 1 lb Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 package (9 oz) refrigerated tortellini
- 2 cups fresh spinach
- Salt and pepper to taste
- Fresh basil or thyme for garnish
Instructions
- Cook sausage in a large pot over medium heat until browned. Remove and set aside.
- Sauté onions and garlic in the same pot until fragrant and translucent.
- Add chicken broth, diced tomatoes, carrots, and celery. Bring to a simmer and cook until vegetables are tender.
- Return sausage to the pot. Add tortellini and cook according to package instructions until al dente.
- Stir in spinach until wilted. Season with salt and pepper.
- Serve hot, garnished with fresh herbs and grated cheese if desired.
Notes
- You can substitute sausage with ground turkey or chicken for a lighter version.
- Use fresh tortellini for best flavor and texture.
