- 1 cup wild rice
- 1 onion, chopped
- 3 carrots, diced
- 2 celery stalks, sliced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Cook wild rice according to package instructions. Set aside.
- In a large pot, heat olive oil over medium heat. Sauté onions, carrots, and celery until tender.
- Add garlic and thyme, cook for 1 minute.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in cooked rice and heavy cream, cook for another 5 minutes.
- Season with salt and pepper, then serve warm garnished with fresh herbs.
Notes
- You can substitute coconut milk for a dairy-free version.
- Add cooked chicken or beans for extra protein.
- Serve with crusty bread for a complete meal.
