  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan with butter or non-stick spray, then lightly dust with flour.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Add melted butter, sugar, eggs, and vanilla. Stir until well combined.
  3. Whisk together flour, baking soda, and salt in a separate bowl. Gradually add to banana mixture and stir gently until just combined.
  4. Combine the remaining 1/4 cup sugar with cinnamon in a small bowl and set aside.
  5. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar evenly over the batter. Add the remaining batter and top with the rest of the cinnamon mixture. Swirl using a knife or skewer.
  6. Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
