- 1 pound smoked sausage, sliced into rounds
- 4 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1/4 cup sour cream
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Fresh parsley for garnish (optional)
Instructions
- Set your oven to 375°F (190°C). Lightly grease a large baking dish with cooking spray or butter.
- Boil diced potatoes in salted water for 8-10 minutes until tender. Drain and set aside.
- Cook the sliced smoked sausage in a skillet over medium heat until browned and crispy, about 5-7 minutes. Remove and set aside.
- Mix ranch dressing, sour cream, garlic powder, and black pepper in a bowl until well combined.
- Layer the cooked potatoes and smoked sausage in the prepared baking dish. Pour the ranch mixture evenly over the top.
- Sprinkle shredded cheddar cheese on top of the casserole.
- Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly with a golden crust.
