- 4 large potatoes, diced
- 1 lb smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until crispy.
- While potatoes roast, cook sliced smoked sausage in a skillet over medium heat until browned and heated through.
- In a large mixing bowl, combine roasted potatoes, cooked sausage, ranch dressing, and shredded cheddar cheese. Mix gently.
- Transfer to a baking dish, sprinkle additional cheese if desired, and bake for 10 minutes until bubbly and melted.
- Garnish with chopped parsley and serve hot.
Notes
- You can substitute sour cream for ranch dressing for a different flavor.
