Instructions

- Shape the mixture into small puffs or balls and flatten slightly.
- Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
- Dip each potato puff into flour, then egg, then coat with panko breadcrumbs.
- Arrange the puffs on the prepared baking sheet and brush with olive oil.
- Bake for 20-25 minutes until golden and crispy.
