Ingredients
Scale
- 1 ½ cups all-purpose flour
- ¾ cup unsalted butter, cold and cubed
- ½ cup powdered sugar
- 4 large apples (preferably Fuji or Honeycrisp), peeled and sliced
- ½ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- ½ cup rolled oats
- ¼ cup chopped nuts (optional)
- Pinch of salt
Instructions
- In a mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold cubed butter and blend until the mixture resembles coarse crumbs. Press the dough evenly into a greased 9×13-inch baking dish. Bake at 350°F (175°C) for 15 minutes or until lightly golden.
- While the crust bakes, toss the sliced apples with lemon juice, brown sugar, cinnamon, nutmeg, and salt. Mix in the oats and nuts if using.
- Spread the apple filling evenly over the cooled shortbread crust. Pour the juices from the bowl over the apples. Crumble remaining shortbread mixture over the top.
- Return to the oven and bake at 350°F (175°C) for 30-35 minutes until golden and bubbly. Cool slightly before slicing.
Notes
- Use firm apple varieties like Fuji or Honeycrisp for best texture and flavor.
- Chill the shortbread crust for 15 minutes before baking for a sturdier base.
- Adjust spices to taste—adding cloves or ginger can enhance warmth.
- Sprinkle extra nuts or oats on top for an extra crunch before baking.
