Chasety’s Apple Crisp Shortbread Bars are the ultimate fall dessert, combining buttery shortbread with warm, spiced apple filling and crunchy topping. Perfect for autumn gatherings and cozy weekends, this easy recipe offers a delightful balance of flavors and textures that everyone will love.

  • Total Time: 1 hour 10 minutes
  • Yield: 12 bars

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ¾ cup unsalted butter, cold and cubed
  • ½ cup powdered sugar
  • 4 large apples (preferably Fuji or Honeycrisp), peeled and sliced
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • ½ cup rolled oats
  • ¼ cup chopped nuts (optional)
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine the all-purpose flour and powdered sugar. Add the cold cubed butter and blend until the mixture resembles coarse crumbs. Press the dough evenly into a greased 9×13-inch baking dish. Bake at 350°F (175°C) for 15 minutes or until lightly golden.
  2. While the crust bakes, toss the sliced apples with lemon juice, brown sugar, cinnamon, nutmeg, and salt. Mix in the oats and nuts if using.
  3. Spread the apple filling evenly over the cooled shortbread crust. Pour the juices from the bowl over the apples. Crumble remaining shortbread mixture over the top.
  4. Return to the oven and bake at 350°F (175°C) for 30-35 minutes until golden and bubbly. Cool slightly before slicing.

Notes

  • Use firm apple varieties like Fuji or Honeycrisp for best texture and flavor.
  • Chill the shortbread crust for 15 minutes before baking for a sturdier base.
  • Adjust spices to taste—adding cloves or ginger can enhance warmth.
  • Sprinkle extra nuts or oats on top for an extra crunch before baking.
