Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray and lightly dust with flour.
- In a large mixing bowl, mash the bananas until smooth. Add the softened butter, sugar, eggs, and vanilla extract. Whisk until creamy.
- In a separate bowl, sift together the flour, cocoa powder, espresso powder, baking soda, and salt. Gradually add to the wet ingredients, stirring gently until just combined.
- Fold in the chocolate chips and optional toppings like chopped nuts without over-mixing.
- Pour the batter into the prepared loaf pan. Bake for 55-65 minutes until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
