- 1/2 cup caramel sauce (for filling and drizzling)
- Optional: chopped caramelized apples or nuts for garnish
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together the flour, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
- Cream the softened butter and brown sugar until creamy. Add eggs one at a time, mixing well. Stir in vanilla extract. Gradually add apple cider, mixing until smooth.
- Combine the dry ingredients with the wet mixture, stirring gently until just combined. The batter should be slightly thick but pourable.
- Drop spoonfuls or pipe batter onto prepared baking sheets, forming circles about 2 inches apart.
- Bake for 12-15 minutes or until golden edges. Let cool completely on a wire rack.
- Warm the caramel sauce slightly for easier spreading. Prepare the filling.
- Spread caramel filling on the flat side of one cake, then top with another to form a sandwich. Drizzle with extra caramel sauce and garnish with optional toppings.
Notes
- Store the assembled whoopie pies in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.
- Wrap individually and freeze for up to one month for long-term storage.
- Warm the caramel before spreading if it thickens in the fridge.
