  • 1 lb (450g) sliced turkey breast, cooked or deli-style
  • 1 avocado, sliced
  • 1 cup fresh spinach leaves
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons light mayonnaise or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Optional: crumbled feta cheese or shredded cheddar for extra flavor

Instructions

  1. In a small bowl, mix the light mayonnaise or Greek yogurt with Dijon mustard, salt, and pepper to create a flavorful spread.
  2. Place each whole wheat tortilla on a clean surface. Spread a generous layer of the prepared sauce evenly over the center of each tortilla.
  3. Start by placing a handful of fresh spinach leaves on top of the spread. Add slices of cooked turkey breast, avocado slices, cherry tomato halves, and red onions. Add cheese if desired.
  4. Fold in the sides of the tortilla and roll it tightly from one end to the other. Wrap it tightly in parchment or plastic wrap to keep everything together.
  5. Refrigerate the wraps for about 15-20 minutes before slicing in half diagonally. Serve chilled or at room temperature.
