- 1 avocado, sliced
- 1 cup fresh spinach leaves
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tablespoons light mayonnaise or Greek yogurt
- 1 tablespoon Dijon mustard
- 1/2 teaspoon black pepper
- Salt to taste
- Optional: crumbled feta cheese or shredded cheddar for extra flavor
Instructions
- In a small bowl, mix the light mayonnaise or Greek yogurt with Dijon mustard, salt, and pepper to create a flavorful spread.
- Place each whole wheat tortilla on a clean surface. Spread a generous layer of the prepared sauce evenly over the center of each tortilla.
- Start by placing a handful of fresh spinach leaves on top of the spread. Add slices of cooked turkey breast, avocado slices, cherry tomato halves, and red onions. Add cheese if desired.
- Fold in the sides of the tortilla and roll it tightly from one end to the other. Wrap it tightly in parchment or plastic wrap to keep everything together.
- Refrigerate the wraps for about 15-20 minutes before slicing in half diagonally. Serve chilled or at room temperature.
Notes
- For extra flavor, sprinkle crumbled feta or shredded cheddar cheese before rolling.
- To prevent sogginess, keep the sauce separate until serving if preparing in advance.
