Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- Optional: 1/2 cup chopped nuts for extra texture
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
- In a large bowl, mash the ripe bananas until smooth. Add the granulated sugar, melted butter, eggs, and vanilla extract, whisking until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gently fold the dry ingredients into the wet mixture until just combined.
- Fold in the chocolate chips and nuts (if using) ensuring even distribution.
- Scoop the batter into the muffin tin, filling each about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. The muffins should be golden and moist inside.
Notes
- Use very ripe bananas for maximum sweetness and moisture.
- Avoid overmixing to keep muffins light and fluffy.
- Adjust chocolate chip quantity based on your chocolate preference.
- For healthier options, substitute whole wheat flour or add oats.
