- 12 ounces of your favorite pasta
- 2 cups roasted squash, cubed
- 1 pound sausage (turkey, chicken, or pork)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic, dried thyme, and sage to the skillet. Cook for 1 minute until fragrant.
- Stir in roasted squash and cook for another 2-3 minutes to heat through.
- Combine cooked pasta with sausage and squash mixture. Toss to combine. Season with salt and pepper to taste.
Notes
- Feel free to substitute the sausage with vegetarian or vegan options for a plant-based version.
- Adding a splash of cream can make the dish creamier.
