Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1/2 cup apple cider
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • Cream cheese frosting for filling

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together butter and brown sugar until light and fluffy.
  3. Add egg and apple cider, mix well.
  4. In a separate bowl, whisk dry ingredients: flour, baking powder, cinnamon, nutmeg, salt.
  5. Gradually add dry mixture to wet ingredients, mix until combined.
  6. Drop spoonfuls onto prepared baking sheets and bake for 12-15 minutes.
  7. Allow cookies to cool completely, then spread cream cheese frosting on the bottom of one cookie and top with another to form sandwiches.
