- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1/2 cup apple cider
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- Cream cheese frosting for filling
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, cream together butter and brown sugar until light and fluffy.
- Add egg and apple cider, mix well.
- In a separate bowl, whisk dry ingredients: flour, baking powder, cinnamon, nutmeg, salt.
- Gradually add dry mixture to wet ingredients, mix until combined.
- Drop spoonfuls onto prepared baking sheets and bake for 12-15 minutes.
- Allow cookies to cool completely, then spread cream cheese frosting on the bottom of one cookie and top with another to form sandwiches.
Notes
- Store in an airtight container at room temperature for up to 3 days.
- Can be frozen for longer storage.
