Instructions
- Start by slicing the chicken breasts into thin strips or bite-sized pieces. Set aside. In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, and chili flakes to create a flavorful marinade.
- Place the chicken pieces in a large bowl or zip-top bag, then pour the marinade over the chicken. Ensure all pieces are evenly coated. Cover and refrigerate for at least 30 minutes.
- Heat a tablespoon of olive oil in a large skillet or wok over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, pour in the remaining marinade and bring to a gentle simmer. Mix the cornstarch with water to make a slurry, then stir into the sauce. Cook until thickened, about 2-3 minutes.
- Return the cooked chicken to the skillet, tossing to coat thoroughly. Cook for an additional 2 minutes until heated through. Garnish with sesame seeds and chopped green onions.
