- 1 lb chicken breast or tofu, diced
- 4 cups vegetable broth
- 2 cups chopped spinach or kale
- 1 cup diced carrots
- 1 cup chopped celery
- 1 cup diced zucchini
- 2 cloves garlic, minced

- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add garlic and sauté until fragrant.
- Add diced chicken or tofu and cook until lightly browned. </li
- Add carrots, celery, and zucchini, cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add spinach or kale during the last 5 minutes.
- Season with salt and pepper.
- Serve hot garnished with fresh herbs.

- Feel free to add other vegetables like bell peppers or mushrooms for variety.
